Quick, Easy, and Healthy Whole30 Delicious Cookies
Made with Carrot, Shredded Coconut, Instant Oats, and Pumpkin Spice these Cookies are a delightful Healthy treat design to nurture your Body and Soul 😃 during cold weather!

2 1/2 cups Instant/ Quick Oats
1/3 cup Unsweetened Shredded Coconut
3 tsp Pumpkin Spice
1 tsp Pink Himalayan fine salt
1 cup cooked & mashed Carrot (4 - 5 medium carrots)
1 Egg (wiped) **
1 Banana (mashed)
1 tbsp of Honey
Preheat oven to 350°F (180°C).
Line a cookie sheet with parchment paper.
In a medium bowl, stir together the oats, coconut, carrot pure, banana, egg, honey, pumpkin spice, and salt.
Using your hands (or the help of a tbsp) drop dough into 13 to 14 round-shaped mounds, and place on the prepared baking sheet.
Bake in the preheated oven for 15 minutes until the center of cookies feel firm to the touch.
Transfer baking sheet to cooling rack and cool completely before removing cookies.
Sprinkle with cinnamon
**For a Vegan Version substitute the Egg for Flax.
The substitution is clear and straightforward. Stir 1 tablespoon of finely ground flaxseed into 3 tablespoons of cold water. Let the mixture rest for a minimum of 5 minutes, so the seeds' soluble fiber can form its gel with the water. Stir or beat the gelled flax seed into your dough or batter, and proceed as you normally would.
