These Roasted Vegetables are simple to make and absolutely irresistible!
If you haven’t tried roasting carrots, broccoli, or green beans, you are missing out! Magic happens every time vegetables are roasted in the oven, and these are no exception.
This roasted vegetable recipe is so simple to make, with just a few pantry ingredients. You’ll toss everything together on a sheet pan and bake in your oven.
Fresh from the oven, these vegetables are soft in the center and crisp on the edges. Simply Delicious!
A simple to make yummy healthy snack, appetizer, or side dish alternative.
- 1 pound of carrots (about 5 medium-size carrots), peeled and sliced.
- 1 broccoli head, trimmed and cut into bite-size florets
- 1 pound of fresh green beans, trimmed (about 35 to 40 green beans)
- 3 tablespoons olive oil (one for each vegetable)
- ½ teaspoon ground black pepper
- 1 teaspoon of salt
- 2 tablespoons chopped fresh thyme (optional)
Preheat oven to 400 degrees F (200 degrees C) - 400F is the best temperature for making veggies that are soft in the center yet crisp and charred on the edges.
Start by washing the veggies under running water and dry them well with a clean kitchen towel.
To prepare the vegetables, trim the stem ends of the green beans, separate the Broccoli florets and slice the carrots in a shape you fancy.
Drizzle the green beans, carrots, and broccoli with olive oil, garlic, salt, and pepper.
I recommend going light on the seasoning before roasting, because you can always add more later, to taste.
Use your fingers to make sure the veggies are coated evenly with olive oil.
Finally toss them out on the sheet pan, making sure that they don't overlap.
Roast in the preheated oven for 20-25 minutes.
You can start checking on the green beans and broccoli at 15 minutes and then continue cooking until they are as tender and browned as you like them.
After 20-25 minutes remove the green beans and the broccoli.
Stir the carrots and continue cooking them until they are tender, about 15 minutes more.
Other seasoning ideas
I usually make this basic recipe as is, without any extra seasoning.
Nonetheless, here are some ideas to flavor your roasted veggies.
Garlic: Add one or two cloves of minced garlic or, sprinkle on a little garlic powder before baking.
Lemon: Serve the roasted green beans with a squeeze of fresh lemon juice.
Fresh (or Dried) Herbs: Sprinkle chopped herbs either before cooking or on right before serving. Try oregano, parsley, rosemary, thyme, or basil.
Shallots/Onion: Add chopped shallot/ onion to the pan to roast along with these veggies.
Tomatoes: Chopped fresh tomatoes are delicious with roasted vegetables, in particular green beans and onions. You can also roast cherry tomatoes - delicious!
