Sweet Potato and Almond flour Cookies

INGREDIENTS
1 cup (112 g) Almond flour or Almond meal
3 tbsp (25g) Pumpkin and Sunflower seeds
2 tbsp (15 g) Flaxseed powder
1/2 tbsp (5g) Chia seeds
1/2 tbsp Honey
1 and 1/2 tsp Cinnamon
1/4 tsp Pink Himalayan fine salt
1/3 cup (75 mL) finely mashed cooked sweet potato
2 to 3 tbsp water
Optional Topping: Cinnamon
DIRECTIONS
Preheat oven to 356°F (180°C).
Line a cookie sheet with parchment paper.
In a medium bowl, stir together the seeds, almond flour, sweet potato, cinnamon, flaxseed powder, honey, and salt.
Add 2 tbsp of the water, stirring until completely blended. If the dough is still dry, add one more of the water (up to the full 3 tbsp).
Using your hands (or the help of a tbsp) drop dough into 12 mounds, or roll into 12 balls and place on a prepared baking sheet.
Bake in the preheated oven for 17 to 20 minutes until golden brown at edges and centers of cookies feel firm to the touch.
Transfer baking sheet to cooling rack and cool completely before removing cookies.
If desired, sprinkle with cinnamon
